Something Special

I never got around showing of my wedding ring. The engraving says our wedding date and "per sempre" ohh and then Kristjan went all overboard by adding amore :o) My parents gave me my moms old engagement ring with a whale silhouette, just before heading down to the church. It was a sentimental moment and I really do cherish the ring! It took me easily half a year to find just the right earrings. They are norwegian enameled made in the early 60´s. I bought them in Copenhagens best vintage jewelry boutique "Something Special" Løvstræde 10, 1152 København K.

Licorice & Blackberry cake

Her´s the recipe for my own invented Licorice and Blackberry cake:
4 eggs
100 g sugar
100 g brown sugar
100 g chocolate
100 g licorice (Carletti Big Ben Lakrids Karamel)

Put the licorice caramels into the fridge for 1 hour(makes it easier to crush), crush licorice in a food processor and roughly chop the chocolate.

Beat egg whites stiff. Add sugar and brown sugar and beat until very stiff, glossy peaks form.

Mix in the crushed licorice and chocolate.

Make eather cookies with the help of two spoons (makes about 40-50 cookies) or divide the batter evenly for two meringues using a rubber spatula or a large spoon, spread meringue into marked 10-inch circle on prepared baking sheet lined with parchment paper.

Bake for 1 hour at 125 degree celsius.
You can also use Maltesers or Dajm instead of licorice caramels.
Cool the meringue and whip 2,5 dl heavy cream. Spread evenly on the meringue and add black- and raspberries.
Bon appetit!

Making Meringue

Making meringue has to be one of the most gratifying things in life.
It´s so simple - just sugar & yolks, but ohh so beautiful.
I made a batch of licorice and chocolate meringue cookies as a farewell gift for a great colleague of mine, Jacob. He´s off to a new job and all that comes with it! I wish him all the best.
