Classic with a twist

me and my tummy Kristjans non existing tummy I made a 70´s classic dish the other day. It´s called Parisian beef and is supposed to look like this - a slice toast with a minced beef served with capers, finely chopped raw onion, pickled beets, horseradish and a raw egg yolk.
I made it with toasted rye bread, mixed capers, raw onion, pickled beets, sour cream and wasabi (instead of horseradish) and topped it off with a soft boiled egg. Heart the beet pink with the yellow yolk.
