Pancake cake

My baby sister and I made a pancake cake for my birthday. Actually we made two. I made about 50 pancakes (our apartment reeked), lots of lemon curd and whisked some cream and voilá! The recipe is here
It is a bit strange eating a piece of a pancake, but the cake tasted great (I think anything that includes lemon curd tastes great anyway) and it was a fun process :-)

Grannys datebread

The hole family has been more or less sick so fare this december. I have managed to semi decorate the apartment and do some backing. I always bake date bread at christmastime. The recipe is an old one from my grandmother.

Ingredients (1 bread):
2 eggs
200 grams brown sugar
500 grams flour
1 spoon (generous) backing powder
400 grams dates (cut into half)
1 teacup boiling water

How to:
Take out the stones and cut the dates in half. Pour a teacup of boiling water over the dates and set aside (this makes for a moist bread). Beat eggs and sugar until sugar is dissolved. Add the flour and baking powder and mix well. Last but not least add the now moist dates to the batter and bake at 180 degrees celsius for a good hour. Bon apetit

My fathers hobby

Both my parents have numerous hobbies. My fathers biggest and serious hobby is collecting photos of old ships and vessels. He is a shipping enthusiast with a big E!He recently got a facebook account (only to show and share a fraction of his collection) and the picture above is from there. My fathers collection is a vast one - probably the biggest one in the Faroe Islands. He has pen pals mostly in the UK, and they swap pictures plus a written line about how life is going and of course photo information.

Some time ago I bought this tiny dictionary for under a doller. It´s a danish/norwegian/german dictionary. Must say it´s a very portable size indeed. I went to work last thursday not knowing I would end up eating lunch at NOMA - the Worlds number one restaurant, but I did and it was an amazing experience. Photos: Jacob M Larsen

Snacks:
Tropaeolum majus and snails/Malt crispbread and Juniper
Finnish moss with penny bun fungus powder
Crunchy rind and blackcurrant baked pig skin
Biscuits and wild coriander
Blue mussel in half shell
Fresh fjord shrimps and beurre blanc (fresh red. alive and kicking)
Potato and chicken liver with cocoa powder
Pickled and smoked quails egg (one of NOMAs signature dish)
Radish, carrot, soil and grass
Toast with smoked cod roe, herbs, vinegar powder and fried skin from duck broth
Gorgeous bread served with pork fat and virgin butter (churned just until the buttermilk separates from the butter leaving a tart and fresh taste)

The menu:
Apple and artichoke with dried Apple must powder. On the juices of coriander (my favorite...I think)
Edible crab (Cancer pagurus) and cakile with jelly made out of an Icelandic seaweed called söl and rapeseed oil
Onions, thyme and gooseberry juice
Vintage carrot, see sorrel with fresh truffle and truffle sauce from Gotland (sex on a plate)
The hen and the egg
Buck, unripe walnut and taraxacum With buttermilk cream and golden juniper juice
Cucumber snow and elderflower flan (so fresh and so clean clean)
'Gammel dansk' icecream, dehydrated milk, milk powder crumble and woodsorrel (Gammel Dansk is a bitter herbal digestif similar to Fernet Branca)

Petits fours:
Smoked toffees with marrow fat
Potato chip dipped in chocolate with fennel and green star anise
Buttermilk flødeboller covered with sweet milk chocolate (flødeboller is a chocolate-coated raw marshmallow treat)

Pumpkin decor

I´m so lazy and tiered these days but I should buy a pumpkin to "celebrate" autumn and decorate my credenza at the most. Who knows...maybe I´ll go all the way and spray paint it silver?! There are endless possibilities on how to decorate a pumpkin. My favorite are no-carve painting, decoupage (probable also Margarets favorite) and taping.

Dukkah

Being islanders and all...we eat fish at least twice a week. Nikolina Flora loves when served a crispy portion of dukkah fried fish with pea/lemon- and carrot/cumin/coconut mash. For my dukkah I toast and then bash and grind hazelnuts, coriander seeds, cinnamon, sesame seeds, pepper and salt together for a heavenly aromatic blend.

Kristjan and I were on a date saturday night. We had the most lovely time and food. NOSE2TAIL is a gastropub that aims to prepare as much of an animal as possible. We ordered marrow, homemade pork rinds with mayo, sausages from Danish butchers, cheeses from Danish farms and homemade specialties - and that was just for starters:o) The main course was leg of lamb with ragoût from lamb neck. There was a great atmosphere and i loved the simple interior in the basement situated in the meatpacking district where an old liver pate factory was before.

Belated royal wedding

Never got around to share with you the fabulous day I had with some of my lovely aunts - celebrating the royal wedding between Catherine & William. We eat sushi and typical faroese cookies for dessert. We all knitted whilst watching (I have yet to finnish the dress I started to knit then). My aunt Karinbeth brought all here family wedding photos and my mother shared all here royal wedding magazines plus Betties wedding dress decorated the living room that day.

On wheels

One cozy balcony

Summer in Copenhagen has not been too generous with warmth nor sunshine. We haven´t therefore used the balcony that much. Then one evening, when we had prominent guests, I rather insisted that we should enjoy our glass of wine on the balcony, and it was the most cosy night -at one point it started to poor down and it just made it all the more cosy.

1 year

Time flies when you have the most wonderful daughter ever :o) We celebrated Nikolina Floras first birthday at my parents house togeather with 78 other guests (a mediocre big faroese birthday). Picture Perfect

How strange

Nikolina Flora, Kristjan and I went to see among other things ourselves hanging on the wall at Nikolaj sometime ago now. The paintings are by Mette Helena Rasmussen, made for her final/graduating project. It was a very strange and surreal feeling, seeing my family and myself painted. I look all stiff uppe lip and Mette has once told me I´m the most oldfashion person she knows, but she insisted that that was not the chase with the portraits :o) Any who I had a lovely time celebrating Mette Helena and here fine accomplishment at The Royal Danish Academy of Fine Arts. She has a bright future ahead of here!

Natures Miracles

On Værndamsvej (a charming street between Copenhagen and Frederiksberg) lies a little shed. When you enter the shed you are met with an explosion of colors, scent and forms. Martin Reinicke is the owner and creator of Blomsterskuret (The Floershead). In addition to flower arranging Martin also makes pots. I'm the lucky owner of no less than three pots with Nikolina Floras foot and hand imprint on them. Two of them are gifts for my parents and in laws. I think flowers are small miracles, they cheer people up and give us hope...hallelujah :o)

New Days

Hurray I'm all done breast feeding. I'm so proud of myself - that I made it work even though it was hard work and excruciating at times. Nikolina started at a private child nursery this monday. Big changes for her and for us. I'm the kind that doesn't mind having Nikolina sleeping in our bed and she can stay in our bed until she´s 12 if that is what she wants. Evan though I´m not ready and it is so not happening yet, than I still can daydream about a future room for her. I'd personally love a tent!

Ballcony

Every weekend is a ball since summer started and we now actually use our new balcony for other purposes than Nikolinas outside-balcony-pram-sleeping-place and drying clothes. We still havn´t decided on balcony furniture but plants are on the way and I manegede to buy a lovely simple elegant white lantern from IKEA (just because it was the most unromantic lantern I have seen). ByBi

Bybi is the most appealing project I have heard about in a long time. Copenhagen is in a bee shortage so to solve the problem Bybi (red CityBee) have set up bee hives around the city and to manage them are long term unemployed people that have been trained and educated about bees and now these people pass on their new learning to students and other citizens of the city. The honey from Bybi will be sold at selected stores and the all the money will go to charity. Bybi designed to exploit the environmental, social and economic benefits of sustainable beekeeping and honey production in Copenhagen. We bring more bees to the city and inform city residents about how they can take better care of the environment by taking care of bees. We are a social economic activities. This means that profits from the company will be reinvested in Bybis social and environmental activities.

A permanent rainbow

I want to see the new installation by Olafur Eliasson. It´s a rainbow panorama on the top of Aros Art Museum in Aarhus. Olafur explains":...I have created a space which virtually erases the boundaries between inside and outside – where people become a little uncertain as to whether they have stepped into a work or into part of the museum"

Copenhagen Marathon 11

Nikolina and I cheered on the many participants at this years Copenhagen Marathon - we evan brought along the faroese flag Merkið. However Nikolina wasn't really in a cheering mood, more like a grumpy/sleepy mood. I'm not the running kind... there should be a piletes marathon - i'd so sign up for that!

On the road again...

We payed my sister Billa Jenny a visit on our way home to the Faroe Islands. She´s studying graphic design at Krabbesholm a Folk high school in Skive. The school is located in a beautiful old castle with other related buildings is located at a forest and border to Limfjorden.

Sweet Sweet Katrine

Kristjan came with a envelope today and said:"here´s something you ordered". It was not something I had ordered, but I could not have been more delighted when I saw the sender. It was sweet sweet Katrine from Busy diong nothing and let me tell you - she is not doing nothing - She made my day! :o) I love Nikolinas bib in lovely purple and yellow. There was a sweet note and the whole package was so beautiful.

Semlor

I hosted a faroese mothers group today - and didn´t want Nikolina catching something from the little wonders, so I sent Kristjan off for a looong stroll. It seems every time I have an agenda and have a to-do list Nikolina becomes more than a hand full. But in the end I did manage to bake buns and swedish mini Semlor. Kristjans and Nikolina are really hitting it off. Love it! His maternity leave starts soon -which is bittersweet because that mens I off to work and school again :o(
